The sweet, spicy and exotic flavors of Caribbean cuisine come alive in this series hosted by personal chef Hugh Sinclair, also known as chef Irie, Lisa Lee Arneaud and Cynthia "chef Thia" Verna. Each half hour explores a traditional, local dish or ingredient, and its importance to the culture. Haitian-born chef Thia infuses Caribbean, African, Latin, Asian, French and Mediterranean flavors into Haitian fine dining. Recipes include turkey sauteed in white wine; cornmeal polenta with spinach; curried peanut chicken with sauteed green beans; and pineapple glazed pork with a mango and jicama salad.
